Sendmail is the most flexible, and most fitting for a company that does
e-mail for fun and profit, where complex address rewrites are commonplace. 

Postfix (+dspam+procmail+dbmail) is what I use on my personal mail
server, and I've found it to be relatively easy to configure compared to
Sendmail.

I'd also highly recommend SuSE 9.3 for a stable platform to run it on,
although you'll need to recompile Postfix to get MySQL support under
SuSE 9.3.  I've got the .spec file if you need it.
