Hi Jay,
Thanks for the tip. I've heard Cinnamon and Mate mentioned before, and am considering them. I haven't researched it yet since I'm putting off upgrading Ubuntu 11.04 until they stop patching it. Gnome 2 works just like I need it to and I've customized it the way I like it. I like their "panels". I have one on the top of the screen that holds a cpu frequency monitor and buttons for my running applications. I have one on the right that holds the Ubuntu "start" menu and cpu / memory / swap space monitor as well as notifications and recycle bin, volume control, etc. But, if I have to change, I'll be considering these. Is it possible to put Cinnamon or Mate on Ubuntu 12.10 instead of the Unity UI? If so, how would I go about that?

Thanks for the tip. I'm also going to be considering XFCE and maybe LXDE as well. Based on what I said above about what I like about Gnome 2, which environment do you think is the most adaptable and customizable? I especially like to add active application buttons, cpu monitors, temp monitors, and notifications, etc. around the edges of the screen. I also need a comprehensive hierarchical menu system where I can browse to every program on the system if I don't know what's there or what to search for.
