TL;DR - do this every day:

$ sudo rdiff-backup --exclude-special-files --include /  \
                  --exclude /Backups /Backups
$ sudo rdiff-backup  --force --remove-older-than 60D /Backups


Be happy. It really is that simple to have daily, automatic, versioned backups.
