Answering my own Q

On CentOS I have vim-X11 package (along with others).   The command for the GUI is /usr/bin/gvim and comes from that package.

Hmm, on Centos:

[root at centosvm esc]# yum install xvim
Loaded plugins: fastestmirror
Loading mirror speeds from cached hostfile
  * base: mirror.wiredtree.com
  * epel: www.gtlib.gatech.edu
  * extras: centos.vipernetworksystems.com
  * updates: mirrors.gigenet.com
Setting up Install Process
No package xvim available.
Nothing to do

I figured it would be in epel.
