The answer depends on what your priorities are ...

For security I personally prefer OpenBSD (not only because it is a compactly
run security-first project but because I am most familiar with it) but it
isn't what comes to mind when I think "newbie"
For more security and more granularity (also more time maintaining and more
paranoia) you might want SELinux
For Java servers I would suggest any Linux and then FreeBSD
For ease of updating I know Debian but wouldn't hesitate to go Slack.
FreeBSD is a consideration too.  But you can update anything (with enough
scripts !)
For ease of maintaining why not stick with what you know ???  and if you
know it really well it can be more secure than suddenly trying to learn
something else
For lots of nice features but also a buttload of unnecessary crap I would
suggest Suse, RH, Mandrake
For a really base install (I want a kernel and a command line) I would
suggest Debian or Slackware
If you are into pain you could do Solaris

if you know what you are doing you could even do Windows (no, I kid you
not - spend some time with Jonathon Rickman)

 ... just depends on your priorities and what you want, what you need, and
what trade-offs you are prepared to make ... just like life.

I do like Yast2 too, but i prefer to do package management in a console
window, esp on remote systems.  To me dselect can't be beat for that.
