Gimp is the app for that. Nothing else has come close...yet. If you're 
processing image files for pre-press, it's lacking a lot of functionality. 
But most people don't need that.

Xmms used to be the last word on playing music files, but there are two KDE 
apps that made me dump it. Both Juk and Amarok are really great not only for 
playing music files, but managing id3 tags as well. I would give the edge to 
Amarok, but it's still a fairly new app. Needs more development.
