I do this now.  From Mozilla: file->print->properties

There you have 'Print command'  mine is 'lpr -P laser' where laser is a 
CUPS definition for my qms laser printer.  I can change it to 'lpr -P 
laserbw' and I'll get the CUPS defined printer for black/white print on 
that same laser.
