I've taken some classes from learningtree a while back, here's the url
for their apache training:

http://www.learningtree.com/us/ilt/courses/541out.htm

Unfortunately, their schedule through November does not list it being
offered. Call them and see what they might do?

As far as specifics, I would like to learn basic configuration (including virtual hosts, etc.), module installation, cgi, perl, php and database connectivity (MySQL). So I guess I'm looking more for a comprehensive overview to give me a good foundation.

I didn't have to buy my radio from a specific company to listen
to FM, why doesn't that apply to the Internet (anymore...)?
