[ale] Ubuntu server + gui

On one of my side projects, I want to install some Ubuntu servers with a
basic GUI (preferably not Unity). What's the best way to do this?

I don't want libre office and all the stuff that would normally come with
installing the desktop meta-package. I just want some non-IT folk to be
able to log on locally and easily manage files or perform some other
functions for me on the event of a WAN failure.
