On Linux I'm a big fan of the Hamster project:

On my Mac I use Billings:

http://www.marketcircle.com/billings/

Both fall into the "get out of my way, and keep track" style of
time-management apps.

Billings has the added benefit of automatically creating invoices for
my customers.

If I could get projecthamster running under macos, I'd be moving back
to that. (being the OSS fan I am).
