Try XFCE on the Linux side.  There is a pretty good out of the box implementation of it on OpenSUSE.  I was a Gnome fan, until they did that stupid tablet-like interface, and now I'm a happy XFCE user.

I'm typing this from a tablet.  However, for any serious work I use a PC.  I'm not too worried they'll die out.  May be fewer vendors.  Getting a good OS to run may be a problem.  Both Ubuntu and MS have abandoned good pc OS design.  I'm upgrading most of my dual boot pc's to Windows 7 on the MS side.  Not sure what I'll upgrade to from Ubuntu 11.04 on the Linux side.
