I'd bet the BIOS order (order HW is initialized) of the disks is different than how Linux sees it (order the drivers load).  hd1 is not sdb.

Interrupt GRUB during the boot, and drop to the GRUB command line.  type "root (hd0,0)" or "root (hd2,0)" and see what response you get, then adjust GRUB entry accordingly.
