On the client side you can use pidgin (Linux/Windows/Mac) to connect
to the Jabber server.

A very simple for Windows is pandion http://www.pandion.im

I just got done set up iChat on Mac OS X that can talk to Openfire on
Linux / Red Hat.

Have you tried SUSE Studio? Need to create a Live CD,  an app you want
to package and distribute , or create your own linux distro. Give SUSE
