It's been a while, but that should work, check out 'rec' for recording. 
  I don't know if the quality will be that good though, depending on the 
acoustics and the quality of the mic.  You can generate various audio 
formats, although I don't think it supports mp3.  You can easily 
generate a .wav file and convert that to mp3.
