One more reason to use mod_php is to have persistant database connections,
which is imposible with cgi version of php.

You already have it.  The Red Hat php rpm includes the PHP Apache module.

you can do php via Apache module (mod_php) or via cgi (plain PHP) or via 
command-line (plain PHP)
